Aqua ViTea:
The Full Breakdown
Vermont kombucha with 5g sugar, verified alcohol removal, and live probiotics. Here’s everything worth knowing about this brand.
The Short Version
Aqua ViTea is a Vermont-based kombucha and probiotic seltzer brand that’s been quietly doing things right since 2007. Founded by a brewer and a naturopath, they’re the largest kombucha producer on the East Coast, one of only two makers in the country using spinning cone column technology to extract alcohol from their kombucha, and they keep sugar at 5g per serving — roughly half the industry average. If you care about what goes into your gut, this brand is worth knowing.
In 2005, Jeff Weaber and his wife Dr. Katina Martin packed up their life in Portland, Oregon and moved to rural Vermont. Jeff had spent years as a brewer at The Lucky Labrador Brewing Company, learning fermentation from the inside out. Katina was building a career in naturopathic medicine — she’s a licensed naturopath, midwife, and acupuncturist.
The collision of those two worlds is what made Aqua ViTea possible.
Jeff started brewing kombucha in their farmhouse basement in Salisbury, Vermont. Not as a business plan. As a way to support Katina’s naturopathic practice. The “food as medicine” philosophy wasn’t a marketing angle — it was literally how they lived.

Here’s a problem most people don’t think about: kombucha is fermented. Fermentation produces alcohol. Most commercial kombucha sits at or just below the 0.5% ABV legal threshold, and some brands have been caught exceeding it.
Aqua ViTea’s solution was a spinning cone column — a piece of equipment that gently separates alcohol from the finished kombucha without using extreme heat. The investment was roughly $2 million. At the time, it made them one of only two kombucha producers in the entire country with this technology.

Today, Aqua ViTea operates out of a state-of-the-art facility on Pond Lane in Middlebury, VT — the former Woodchuck Cider location. They employ about 30 people, 90% of whom come from the surrounding rural communities.
5g across the entire lineup. Most mainstream kombucha brands land at 8–12g per serving. Aqua ViTea keeps it low without artificial sweeteners — just well-managed fermentation that eats through the cane sugar naturally. Never pasteurized. Live cultures survive from brewery to bottle to your gut.

Each can contains Bacillus Subtilis DE111 — a spore-forming probiotic strain known for stability (it survives at room temperature, in your pantry, and through stomach acid). The base is filtered carbonated water plus a hit of kombucha and organic natural flavors.
If you’ve tried prebiotic sodas like Olipop or Poppi and want something lighter and less sweet, the Aqua Seltzer line is worth exploring.
AfterGlow Hard Kombucha
Aqua ViTea also produces AfterGlow, a hard kombucha line where the natural alcohol is allowed to mature rather than being extracted. Organic, gluten-free, and positioned as a mindful alternative to beer and cider. We won’t dive deep here since Get Bonus Life focuses on non-alcoholic options, but the same fermentation expertise goes into this line.

Reusable glass bottles. Up to 35% of their kombucha fountain fills use customer-brought reusable bottles, reducing single-use packaging daily.
Jeff Weaber puts it simply: “Kat and I founded this company with a health mission, not a money mission.”
That line could sound hollow from a bigger brand. From a company that started in a farmhouse basement and still composts its own tea? It hits different.

Aqua ViTea gives you actual live probiotics from real fermentation with verified alcohol removal. Prebiotic sodas like Olipop and Poppi use prebiotic fiber (different mechanism). Traditional kombucha brands don’t have the alcohol extraction transparency. Aqua ViTea sits in a unique position.

The Bottom Line
Aqua ViTea doesn’t have the Instagram presence of Poppi or the grocery store ubiquity of GT’s. What they have is something harder to manufacture: genuine authenticity.
A brewer who learned fermentation at a Portland craft brewery. A naturopath who believes in food as medicine. A $2 million investment in technology that lets the kombucha ferment fully and naturally. A sustainability program that turns waste into energy and compost into farmland.
And the drinks themselves? Low sugar, live probiotics, clean flavors that reviewers have compared to champagne.
If you’re already in the prebiotic soda world and want to level up to actual live cultures, or if you’re part of the sober/sober-curious community looking for a drink with substance, Aqua ViTea deserves a spot in your rotation.
